Msemen (moroccan Orange Blossom Pancakes)

Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 1/4 cups warm water
  • 1/4 cup vegetable oil
  • 1/4 cup melted butter
  • 2 tablespoons orange blossom water

Instructions

  1. In a large bowl, mix the flour, salt, and sugar. Gradually add the warm water, kneading the dough until smooth and elastic.
  2. Divide the dough into 8 equal portions and shape each portion into a ball. Place the balls on a baking sheet and cover with a damp cloth. Let the dough rest for 15 minutes.
  3. Combine the vegetable oil and melted butter in a small bowl. Using your hands, flatten each dough ball into a thin circle, then brush it with the oil and butter mixture.
  4. Fold the dough circle into thirds to form a triangle. Brush the top with more oil and butter, then fold the triangle in half to create a smaller triangle.
  5. Heat a skillet over medium heat and cook the pancakes for 2-3 minutes on each side, until golden brown and crispy.
  6. Remove from the skillet and place on a paper towel to drain any excess oil. Repeat with the remaining dough balls.
  7. Drizzle the cooked pancakes with orange blossom water before serving.
