Msemen (moroccan Orange Blossom Pancakes)
Msemen, also known as Moroccan Orange Blossom Pancakes, are a delicious and popular treat in Moroccan cuisine. These flaky, buttery pancakes are infused with the delicate flavor of orange blossom water, making them a delightful breakfast or snack option.
Ingredients
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 1/4 cups warm water
- 1/4 cup vegetable oil
- 1/4 cup melted butter
- 2 tablespoons orange blossom water
Instructions
- In a large bowl, mix the flour, salt, and sugar. Gradually add the warm water, kneading the dough until smooth and elastic.
- Divide the dough into 8 equal portions and shape each portion into a ball. Place the balls on a baking sheet and cover with a damp cloth. Let the dough rest for 15 minutes.
- Combine the vegetable oil and melted butter in a small bowl. Using your hands, flatten each dough ball into a thin circle, then brush it with the oil and butter mixture.
- Fold the dough circle into thirds to form a triangle. Brush the top with more oil and butter, then fold the triangle in half to create a smaller triangle.
- Heat a skillet over medium heat and cook the pancakes for 2-3 minutes on each side, until golden brown and crispy.
- Remove from the skillet and place on a paper towel to drain any excess oil. Repeat with the remaining dough balls.
- Drizzle the cooked pancakes with orange blossom water before serving.
