Mughlai Mutton Korma

Ingredients

  • 500g mutton, cut into pieces
  • 1 cup yogurt
  • 1/2 cup fried onions
  • 1/4 cup cashew nuts
  • 1/4 cup almonds
  • 2 tbsp ghee
  • 2 onions, finely chopped
  • 2 tomatoes, pureed
  • 1 tbsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • 1/2 tsp saffron strands
  • 2 tbsp fresh cream
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Marinate the mutton with yogurt, fried onions, and salt. Keep it aside for 30 minutes.
  2. Grind the cashew nuts and almonds into a fine paste.
  3. Heat ghee in a pan and sauté the chopped onions until golden brown.
  4. Add the ginger-garlic paste and cook until the raw smell disappears.
  5. Now, add the marinated mutton and cook until it changes color.
  6. Stir in the tomato puree, red chili powder, turmeric powder, and garam masala. Cook for 5 minutes.
  7. Pour in the cashew-almond paste and saffron strands. Mix well.
  8. Add water as needed, cover, and cook until the mutton is tender.
  9. Finish by adding fresh cream and garnish with coriander leaves.
