Ingredients

  • 1/2 cup short-grain rice
  • 4 cups almond milk
  • 1/2 cup sugar
  • 1/4 teaspoon saffron threads
  • 1 teaspoon rose water
  • 2 tablespoons chopped pistachios, for garnish

Instructions

  1. In a saucepan, combine the rice and almond milk. Bring to a simmer over medium heat, stirring occasionally.
  2. Add the sugar and saffron threads to the saucepan. Continue to cook, stirring frequently, until the rice is tender and the mixture has thickened, about 15-20 minutes.
  3. Remove the saucepan from the heat and stir in the rose water.
  4. Divide the muhalabia among serving bowls and refrigerate until chilled, about 2 hours.
  5. Before serving, garnish with chopped pistachios.
