Muhalabia (bahraini Saffron Rice Pudding)
Muhalabia is a traditional Bahraini saffron rice pudding that is creamy, fragrant, and delicately sweet. It is a popular dessert in Bahrain and is often served during special occasions and celebrations.
Ingredients
- 1/2 cup short-grain rice
- 4 cups almond milk
- 1/2 cup sugar
- 1/4 teaspoon saffron threads
- 1 teaspoon rose water
- 2 tablespoons chopped pistachios, for garnish
Instructions
- In a saucepan, combine the rice and almond milk. Bring to a simmer over medium heat, stirring occasionally.
- Add the sugar and saffron threads to the saucepan. Continue to cook, stirring frequently, until the rice is tender and the mixture has thickened, about 15-20 minutes.
- Remove the saucepan from the heat and stir in the rose water.
- Divide the muhalabia among serving bowls and refrigerate until chilled, about 2 hours.
- Before serving, garnish with chopped pistachios.
