Muhallabia Ruz (traditional Emirati Rice Pudding)
Muhallabia Ruz is a traditional Emirati rice pudding that is creamy, fragrant, and delicately sweet. This dessert is a popular choice for special occasions and family gatherings in the United Arab Emirates.
Ingredients
- 1/2 cup basmati rice
- 4 cups whole milk
- 1/2 cup sugar
- 1 teaspoon rose water
- 1/4 cup chopped pistachios, for garnish
- 1/4 teaspoon ground cardamom
Instructions
- In a heavy-bottomed saucepan, combine the rice and milk. Bring to a gentle boil over medium heat, stirring frequently to prevent the rice from sticking to the bottom of the pan.
- Reduce the heat to low and simmer the rice, uncovered, for 25-30 minutes, or until the mixture thickens to a pudding-like consistency. Stir occasionally.
- Stir in the sugar and rose water, and continue to cook for an additional 5 minutes, stirring constantly.
- Remove the saucepan from the heat and stir in the ground cardamom.
- Divide the pudding into serving bowls and refrigerate for at least 2 hours, or until chilled.
- Before serving, garnish with chopped pistachios.
