Ingredients

  • 1/2 cup basmati rice
  • 4 cups whole milk
  • 1/2 cup sugar
  • 1 teaspoon rose water
  • 1/4 cup chopped pistachios, for garnish
  • 1/4 teaspoon ground cardamom

Instructions

  1. In a heavy-bottomed saucepan, combine the rice and milk. Bring to a gentle boil over medium heat, stirring frequently to prevent the rice from sticking to the bottom of the pan.
  2. Reduce the heat to low and simmer the rice, uncovered, for 25-30 minutes, or until the mixture thickens to a pudding-like consistency. Stir occasionally.
  3. Stir in the sugar and rose water, and continue to cook for an additional 5 minutes, stirring constantly.
  4. Remove the saucepan from the heat and stir in the ground cardamom.
  5. Divide the pudding into serving bowls and refrigerate for at least 2 hours, or until chilled.
  6. Before serving, garnish with chopped pistachios.
