Ingredients

  • 1/2 cup basmati rice
  • 4 cups whole milk
  • 1/2 cup sugar
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon saffron threads
  • 2 tablespoons rose water
  • Chopped pistachios and almonds for garnish

Instructions

  1. In a saucepan, combine the rice and 2 cups of milk. Cook over medium heat, stirring occasionally, until the rice is tender and the mixture has thickened, about 20 minutes.
  2. Stir in the remaining 2 cups of milk, sugar, cardamom, and saffron. Cook for an additional 10 minutes, stirring frequently.
  3. Remove the pudding from the heat and stir in the rose water. Allow it to cool slightly before transferring to serving dishes.
  4. Refrigerate the pudding for at least 2 hours before serving. Garnish with chopped pistachios and almonds before serving.
