Mujaddara (armenian Lentil And Bulgur Pilaf)

Mujaddara is a traditional Armenian dish made with lentils, bulgur, and caramelized onions. It's a simple yet flavorful pilaf that is often enjoyed as a main course or as a side dish.

Mujaddara (armenian Lentil And Bulgur Pilaf)

Ingredients

  • 1 cup brown lentils
  • 1 cup coarse bulgur
  • 4 large onions, thinly sliced
  • 4 tablespoons olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils and place them in a pot with 3 cups of water. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the lentils are tender.
  2. While the lentils are cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 20-25 minutes.
  3. In a separate pot, bring 2 cups of water to a boil. Add the bulgur, cumin, cinnamon, salt, and pepper. Reduce heat, cover, and simmer for 15 minutes or until the bulgur is cooked and the water is absorbed.
  4. Once the lentils and bulgur are cooked, combine them in a large bowl. Gently fold in the caramelized onions and remaining 2 tablespoons of olive oil. Adjust seasoning if needed.
  5. Serve the mujaddara warm, garnished with additional caramelized onions if desired.
