Mujaddara (armenian Lentil And Bulgur Pilaf)
Mujaddara is a traditional Armenian dish made with lentils, bulgur, and caramelized onions. It's a simple yet flavorful pilaf that is often enjoyed as a main course or as a side dish.
Ingredients
- 1 cup brown lentils
- 1 cup coarse bulgur
- 4 large onions, thinly sliced
- 4 tablespoons olive oil
- 1 teaspoon cumin
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
Instructions
- Rinse the lentils and place them in a pot with 3 cups of water. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the lentils are tender.
- While the lentils are cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 20-25 minutes.
- In a separate pot, bring 2 cups of water to a boil. Add the bulgur, cumin, cinnamon, salt, and pepper. Reduce heat, cover, and simmer for 15 minutes or until the bulgur is cooked and the water is absorbed.
- Once the lentils and bulgur are cooked, combine them in a large bowl. Gently fold in the caramelized onions and remaining 2 tablespoons of olive oil. Adjust seasoning if needed.
- Serve the mujaddara warm, garnished with additional caramelized onions if desired.
