Mujaddara (assyrian Lentil And Rice Pilaf)
Mujaddara is a traditional Assyrian dish made with lentils, rice, and caramelized onions. It's a comforting and flavorful pilaf that is perfect for a hearty and satisfying meal.
Ingredients
- 1 cup brown or green lentils
- 1 cup basmati rice
- 4 large onions, thinly sliced
- 4 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
Instructions
- Rinse the lentils and place them in a pot with 3 cups of water. Bring to a boil, then reduce heat and simmer for 15 minutes.
- While the lentils are cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 20-25 minutes.
- Once the lentils are partially cooked, add the rice, cumin, coriander, cinnamon, salt, and pepper to the pot. Stir to combine, then cover and cook for an additional 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Once the rice is cooked, fluff it with a fork and gently fold in half of the caramelized onions.
- Transfer the mujaddara to a serving dish and top with the remaining caramelized onions. Serve hot and enjoy!
