Ingredients

  • 1 cup brown lentils
  • 1 cup basmati rice
  • 2 onions, thinly sliced
  • 4 cups vegetable broth
  • 2 teaspoons ground cumin
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground turmeric
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils and rice under cold water, then drain.
  2. In a large pot, heat the olive oil over medium heat. Add the sliced onions and cook until caramelized, about 15 minutes.
  3. Stir in the cumin, cinnamon, and turmeric, and cook for another 2 minutes.
  4. Add the lentils, rice, and vegetable broth to the pot. Season with salt and pepper, then bring to a boil.
  5. Reduce the heat to low, cover, and simmer for 25-30 minutes, or until the rice and lentils are tender and the liquid is absorbed.
  6. Fluff the mujaddara with a fork and let it sit, covered, for 5 minutes before serving.
