Mujaddara Bil Djej is a traditional Syrian Jewish dish that combines spiced rice with tender chicken, creating a flavorful and comforting meal.
Ingredients
- 1 cup basmati rice
- 1 lb chicken thighs, boneless and skinless
- 1 large onion, thinly sliced
- 3 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- 2 cups chicken broth
Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and cook until caramelized, about 15 minutes. Remove half of the onions and set aside for garnish.
- Add the remaining tablespoon of olive oil to the pot and add the chicken thighs. Season with cumin, coriander, cinnamon, salt, and pepper. Cook until the chicken is browned on all sides.
- Stir in the rice and cook for 2 minutes, then pour in the chicken broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes or until the rice is tender and the chicken is cooked through.
- Fluff the rice with a fork and transfer to a serving platter. Top with the reserved caramelized onions and serve hot.
