Mujaddara Bil Riz (lentil And Rice Pilaf)

Ingredients

  • 1 cup brown or green lentils, rinsed
  • 1 cup long-grain white rice
  • 2 large onions, thinly sliced
  • 4 tablespoons olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 3 cups water

Instructions

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and cook until caramelized, stirring occasionally, for about 15-20 minutes. Remove half of the caramelized onions and set aside for garnish.
  2. Add the remaining 2 tablespoons of olive oil to the pot with the caramelized onions. Stir in the cumin, cinnamon, salt, and pepper, and cook for another 2 minutes.
  3. Add the rinsed lentils to the pot and stir to combine with the onion and spice mixture. Cook for 2-3 minutes.
  4. Add the rice to the pot and stir to combine with the lentils and onions. Pour in the water and bring the mixture to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the rice and lentils are tender and the liquid is absorbed.
  6. Fluff the mujaddara with a fork and transfer to a serving dish. Top with the reserved caramelized onions.
