- 1 cup long-grain white rice
- 2 large onions, thinly sliced
- 4 tablespoons olive oil
- 1 teaspoon cumin
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- 3 cups water

- Add the remaining 2 tablespoons of olive oil to the pot with the caramelized onions. Stir in the cumin, cinnamon, salt, and pepper, and cook for another 2 minutes.
- Add the rinsed lentils to the pot and stir to combine with the onion and spice mixture. Cook for 2-3 minutes.
- Add the rice to the pot and stir to combine with the lentils and onions. Pour in the water and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the rice and lentils are tender and the liquid is absorbed.
- Fluff the mujaddara with a fork and transfer to a serving dish. Top with the reserved caramelized onions.
