Mujaddara Sabanekh is a traditional Syrian Jewish stew made with spinach and lentils. This hearty and flavorful dish is a staple in Syrian cuisine and is perfect for a comforting and nutritious meal.
Ingredients
- 1 cup brown lentils
- 2 cups water
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon cinnamon
- 4 cups fresh spinach, chopped
- Salt and pepper to taste
- 3 tablespoons olive oil
Instructions
- Rinse the lentils and place them in a pot with 2 cups of water. Bring to a boil, then reduce heat and simmer for 20 minutes.
- In a separate pan, heat the olive oil over medium heat. Add the chopped onion and cook until translucent. Add the minced garlic, cumin, coriander, and cinnamon, and cook for another 2 minutes.
- Add the chopped spinach to the pan and cook until wilted.
- Once the lentils are cooked, add the spinach mixture to the pot with the lentils. Season with salt and pepper, and simmer for an additional 10 minutes.
- Adjust seasoning to taste and serve hot.
