Ingredients

  • 1 cup brown lentils
  • 2 cups water
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon cinnamon
  • 4 cups fresh spinach, chopped
  • Salt and pepper to taste
  • 3 tablespoons olive oil

Instructions

  1. Rinse the lentils and place them in a pot with 2 cups of water. Bring to a boil, then reduce heat and simmer for 20 minutes.
  2. In a separate pan, heat the olive oil over medium heat. Add the chopped onion and cook until translucent. Add the minced garlic, cumin, coriander, and cinnamon, and cook for another 2 minutes.
  3. Add the chopped spinach to the pan and cook until wilted.
  4. Once the lentils are cooked, add the spinach mixture to the pot with the lentils. Season with salt and pepper, and simmer for an additional 10 minutes.
  5. Adjust seasoning to taste and serve hot.
