Ingredients

  • 1 cup brown lentils
  • 1 cup basmati rice

  • 4 cups vegetable broth

  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils and rice under cold water, then set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the sliced onions and cook until caramelized, stirring occasionally.
  3. Add the cumin, coriander, and cinnamon to the onions, and cook for another minute to toast the spices.
