Ingredients
- 1 cup brown lentils
- 1 cup basmati rice
- 2 onions, thinly sliced
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
Instructions
- Rinse the lentils and rice under cold water, then set aside.
- In a large pot, heat the olive oil over medium heat. Add the sliced onions and cook until caramelized, stirring occasionally.
- Add the cumin, coriander, and cinnamon to the onions, and cook for another minute to toast the spices.
