Mujaddara (spiced Lentil And Rice Pilaf)

Ingredients

  • 1 cup brown lentils
  • 1 cup basmati rice
  • 2 onions, thinly sliced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils and rice under cold water.
  2. In a large pot, heat the olive oil over medium heat. Add the sliced onions and cook until caramelized, about 15 minutes.
  3. Stir in the cumin, coriander, and cinnamon, and cook for another 2 minutes.
  4. Add the lentils, rice, and vegetable broth to the pot. Season with salt and pepper.
  5. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice and lentils are tender and the liquid is absorbed.
  6. Fluff the mujaddara with a fork and serve hot.
