Mujaddara (spiced Lentil And Rice Pilaf)

Ingredients
- 1 cup brown lentils
- 1 cup basmati rice
- 2 onions, thinly sliced
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
Instructions
- Rinse the lentils and rice under cold water.
- In a large pot, heat the olive oil over medium heat. Add the sliced onions and cook until caramelized, about 15 minutes.
- Stir in the cumin, coriander, and cinnamon, and cook for another 2 minutes.
- Add the lentils, rice, and vegetable broth to the pot. Season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice and lentils are tender and the liquid is absorbed.
- Fluff the mujaddara with a fork and serve hot.
