Mujaddara (syrian Spiced Lentils With Rice)
Mujaddara is a classic Syrian dish made with spiced lentils and rice, topped with caramelized onions. It's a comforting and flavorful dish that is perfect for a simple weeknight meal or a special occasion.
Ingredients
- 1 cup brown or green lentils
- 1 cup basmati rice
- 2 onions, thinly sliced
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
Instructions
- Rinse the lentils and place them in a pot with the vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
- While the lentils are cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 20 minutes. Set aside.
- In another pot, heat the remaining olive oil over medium heat. Add the rice, cumin, coriander, cinnamon, salt, and pepper. Cook for 2-3 minutes, stirring constantly.
- Once the lentils are cooked, add the spiced rice to the pot with the lentils. Cover and cook for an additional 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Serve the mujaddara topped with the caramelized onions.
