Mujaddara (syrian Spiced Lentils With Rice)

Ingredients

  • 1 cup brown or green lentils
  • 1 cup basmati rice
  • 2 onions, thinly sliced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils and place them in a pot with the vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  2. While the lentils are cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 20 minutes. Set aside.
  3. In another pot, heat the remaining olive oil over medium heat. Add the rice, cumin, coriander, cinnamon, salt, and pepper. Cook for 2-3 minutes, stirring constantly.
  4. Once the lentils are cooked, add the spiced rice to the pot with the lentils. Cover and cook for an additional 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  5. Serve the mujaddara topped with the caramelized onions.
