Mulberry Pie

Ingredients

  • 4 cups fresh mulberries
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice
  • 2 pre-made pie crusts
  • 1 tablespoon unsalted butter, cut into small pieces
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large bowl, gently toss together the mulberries, sugar, flour, cinnamon, salt, and lemon juice until the mulberries are evenly coated. Let the mixture sit for 15 minutes.
  2. Preheat the oven to 375°F (190°C).
  3. Place one pie crust in a 9-inch pie dish. Pour the mulberry filling into the crust and dot the top with pieces of butter.
  4. Place the second pie crust over the filling. Trim any excess crust and crimp the edges to seal. Cut a few slits in the top crust to allow steam to escape.
  5. Brush the top crust with the beaten egg to create a golden finish.
  6. Bake the pie for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
  7. Allow the pie to cool for at least 1 hour before serving.
