Multani Shorba (ملتانی شوربا)

Ingredients

  • 1 cup red lentils, washed and drained
  • 4 cups water
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 1 green chili, chopped
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1/2 tsp turmeric powder
  • 1 tsp cumin seeds
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • Salt to taste
  • 2 tbsp oil
  • Fresh coriander leaves for garnish

Instructions

  1. In a large pot, combine the red lentils and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the lentils are soft.
  2. In a separate pan, heat the oil and add the cumin seeds. Once they start to sizzle, add the chopped onion and sauté until golden brown.
  3. Add the ginger paste, garlic paste, green chili, and tomatoes to the pan. Cook until the tomatoes are soft and the oil separates from the mixture.
  4. Add the turmeric powder, red chili powder, coriander powder, garam masala, and salt to the pan. Mix well and cook for a few minutes.
  5. Pour the cooked lentils into the pan with the spice mixture. Stir well and let the soup simmer for 5-10 minutes to allow the flavors to meld together.
  6. Garnish with fresh coriander leaves before serving.
