Mung Bean Noodles
Mung bean noodles, also known as glass noodles or cellophane noodles, are a popular ingredient in various Asian cuisines. They are made from mung bean starch and are gluten-free, making them a great option for those with dietary restrictions.
Ingredients
- 200g mung bean noodles
- 4 cups water
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 carrot, julienned
- 1 bell pepper, thinly sliced
- 1 cup snow peas
- 2 green onions, chopped
- 1/4 cup cilantro, chopped
- Sesame seeds for garnish
Instructions
- Bring water to a boil in a pot.
- Add mung bean noodles and cook for 3-5 minutes until tender.
- Drain the noodles and rinse with cold water. Set aside.
- In a small bowl, mix soy sauce and sesame oil. Set aside.
- In a large skillet, heat some oil over medium-high heat.
- Add carrot, bell pepper, and snow peas. Stir-fry for 2-3 minutes until slightly tender.
- Add the cooked noodles to the skillet and pour the soy sauce mixture over them.
- Toss everything together until well combined and heated through.
- Remove from heat and stir in green onions and cilantro.
- Transfer to serving plates, garnish with sesame seeds, and serve hot.
