Mung Bean Soup (ginisang Monggo)

Ingredients
- 1 cup mung beans, washed and drained
- 4 cups water
- 2 tablespoons cooking oil
- 4 cloves garlic, minced
- 1 onion, chopped
- 1 tomato, chopped
- 1 cup spinach or malunggay leaves
- 1 cup squash, diced
- 1 cup eggplant, sliced
- Salt and pepper to taste
Instructions
- In a pot, combine mung beans and water. Bring to a boil, then reduce heat and simmer until the beans are soft, about 30 minutes.
- In a separate pan, heat cooking oil over medium heat. Sauté garlic, onion, and tomato until fragrant.
- Add the sautéed mixture to the pot of mung beans.
- Add the squash and eggplant to the pot. Simmer for another 10-15 minutes until the vegetables are tender.
- Add the spinach or malunggay leaves and season with salt and pepper. Cook for an additional 2-3 minutes.
- Adjust seasoning if needed, then serve hot.
