Mung Bean Soup (ginisang Monggo)

Ingredients

  • 1 cup mung beans, washed and drained
  • 4 cups water
  • 2 tablespoons cooking oil
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 1 tomato, chopped
  • 1 cup spinach or malunggay leaves
  • 1 cup squash, diced
  • 1 cup eggplant, sliced
  • Salt and pepper to taste

Instructions

  1. In a pot, combine mung beans and water. Bring to a boil, then reduce heat and simmer until the beans are soft, about 30 minutes.
  2. In a separate pan, heat cooking oil over medium heat. Sauté garlic, onion, and tomato until fragrant.
  3. Add the sautéed mixture to the pot of mung beans.
  4. Add the squash and eggplant to the pot. Simmer for another 10-15 minutes until the vegetables are tender.
  5. Add the spinach or malunggay leaves and season with salt and pepper. Cook for an additional 2-3 minutes.
  6. Adjust seasoning if needed, then serve hot.
