Murabba (sweet Apricot Jam)
Murabba is a traditional sweet apricot jam from Tajik cuisine that is enjoyed as a spread or condiment. It is made by simmering apricots with sugar and spices until they are tender and the mixture thickens into a delicious jam.
Ingredients
- 2 lbs ripe apricots, pitted and chopped
- 2 cups sugar
- 1/4 cup water
- 1 teaspoon lemon juice
- 1/2 teaspoon ground cardamom
Instructions
- In a large pot, combine the chopped apricots, sugar, water, and lemon juice.
- Place the pot over medium heat and bring the mixture to a simmer, stirring occasionally.
- Once the mixture starts to simmer, reduce the heat to low and let it cook for about 20-25 minutes, or until the apricots are tender and the mixture has thickened to a jam-like consistency.
- Stir in the ground cardamom and cook for an additional 5 minutes.
- Remove the pot from the heat and let the murabba cool to room temperature.
- Transfer the murabba to sterilized jars and store in the refrigerator for up to 1 month.
