Murg Biryani, also known as Lucknowi Chicken Biryani, is a classic dish from the Awadhi cuisine of India. This aromatic and flavorful biryani is made with marinated chicken, fragrant basmati rice, and a blend of traditional spices.

Ingredients

  • 2 lbs chicken, cut into pieces
  • 2 cups basmati rice, soaked for 30 minutes
  • 1 cup yogurt
  • 2 onions, thinly sliced
  • 4 tomatoes, chopped
  • 1/4 cup ghee
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh coriander leaves
  • 1/4 cup fried onions
  • 1/4 cup milk
  • Whole spices: bay leaves, cinnamon, cardamom, cloves
  • Ground spices: turmeric, red chili powder, cumin, coriander, garam masala
  • Saffron strands soaked in milk
  • Salt to taste

Instructions

  1. Marinate the chicken with yogurt, ground spices, and salt. Let it sit for 30 minutes.
  2. Heat ghee in a large pot and add the whole spices. Sauté until fragrant.
  3. Add the sliced onions and cook until golden brown.
  4. Stir in the marinated chicken and cook until the oil separates.
  5. Layer the soaked rice over the chicken, then add the chopped tomatoes, mint leaves, coriander leaves, and fried onions.
  6. Pour saffron-infused milk over the rice and add enough water to cover the rice by 1 inch.
  7. Cover the pot and cook on low heat until the rice is tender and the chicken is cooked through.
  8. Fluff the biryani gently with a fork and serve hot.
