Murg Biryani (lucknowi Chicken Biryani)
Murg Biryani, also known as Lucknowi Chicken Biryani, is a classic dish from the Awadhi cuisine of India. This aromatic and flavorful biryani is made with marinated chicken, fragrant basmati rice, and a blend of traditional spices.
Ingredients
- 2 lbs chicken, cut into pieces
- 2 cups basmati rice, soaked for 30 minutes
- 1 cup yogurt
- 2 onions, thinly sliced
- 4 tomatoes, chopped
- 1/4 cup ghee
- 1/4 cup fresh mint leaves
- 1/4 cup fresh coriander leaves
- 1/4 cup fried onions
- 1/4 cup milk
- Whole spices: bay leaves, cinnamon, cardamom, cloves
- Ground spices: turmeric, red chili powder, cumin, coriander, garam masala
- Saffron strands soaked in milk
- Salt to taste
Instructions
- Marinate the chicken with yogurt, ground spices, and salt. Let it sit for 30 minutes.
- Heat ghee in a large pot and add the whole spices. Sauté until fragrant.
- Add the sliced onions and cook until golden brown.
- Stir in the marinated chicken and cook until the oil separates.
- Layer the soaked rice over the chicken, then add the chopped tomatoes, mint leaves, coriander leaves, and fried onions.
- Pour saffron-infused milk over the rice and add enough water to cover the rice by 1 inch.
- Cover the pot and cook on low heat until the rice is tender and the chicken is cooked through.
- Fluff the biryani gently with a fork and serve hot.
