Ingredients

  • 2 cups basmati rice
  • 1 lb chicken, cut into pieces
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 tomatoes, chopped
  • 1/2 cup plain yogurt
  • 1/4 cup cooking oil
  • 1 cinnamon stick
  • 4 green cardamom pods
  • 4 cloves
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 4 cups water

Instructions

  1. Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
  2. In a large pot, heat the cooking oil over medium heat. Add the sliced onions and cook until golden brown.
  3. Add the chicken pieces, garlic, and ginger. Cook until the chicken is no longer pink.
  4. Stir in the chopped tomatoes, yogurt, and spices. Cook for 5 minutes.
  5. Add the drained rice to the pot and stir gently to combine with the chicken and spices.
  6. Pour in the water and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes or until the rice is cooked and the liquid is absorbed.
  7. Fluff the pulao with a fork and serve hot.
