Ingredients

  • 1.5 lbs (700g) chicken, cut into pieces
  • 1 cup plain yogurt
  • 1/2 cup heavy cream
  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 1-inch ginger, grated
  • 1/4 cup cashews
  • 2 tbsp ghee (clarified butter)
  • 1 cinnamon stick
  • 4 green cardamom pods
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground cumin
  • 1/4 tsp cayenne pepper
  • Salt to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a blender, combine the onions, garlic, ginger, and cashews with a little water to make a smooth paste.
  2. Heat ghee in a large pot over medium heat. Add the cinnamon stick and cardamom pods, and sauté for a minute.
  3. Add the onion paste and cook until golden brown.
  4. Add the chicken pieces and cook until they are no longer pink.
  5. Stir in the ground coriander, turmeric, cumin, cayenne pepper, and salt. Cook for a few minutes.
  6. Whisk the yogurt and cream together, then add it to the pot. Simmer for 15-20 minutes, stirring occasionally.
  7. Garnish with fresh cilantro and serve hot with rice or naan.
