Ingredients

  • 1.5 lbs (700g) boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 2 tbsp ginger-garlic paste
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp cayenne pepper
  • Salt to taste
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 1/2 cups tomato puree
  • 1 cup heavy cream
  • 1 tsp garam masala
  • 2 tbsp chopped fresh cilantro

Instructions

  1. In a bowl, combine the yogurt, ginger-garlic paste, ground cumin, ground coriander, turmeric, cayenne pepper, and salt. Add the chicken pieces and marinate for at least 1 hour, or overnight for best results.
  2. Heat the vegetable oil in a large pan over medium heat. Add the marinated chicken pieces and cook until browned and cooked through. Remove the chicken from the pan and set aside.
  3. In the same pan, add a bit more oil if needed and sauté the chopped onion until golden brown. Add the minced garlic and grated ginger, and cook for another 2 minutes.
  4. Pour in the tomato puree and cook for 5 minutes, stirring occasionally. Add the cooked chicken back into the pan.
  5. Stir in the heavy cream and garam masala. Simmer for 10 minutes, allowing the flavors to meld together.
  6. Garnish with chopped cilantro and serve hot with steamed rice or naan bread.
