Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 2 tablespoons tikka masala spice blend
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt to taste
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon grated ginger
  • 1 can (14 oz) crushed tomatoes
  • 1/2 cup heavy cream
  • 1 bag of tortilla chips
  • 1 cup shredded cheese
  • Fresh cilantro, chopped, for garnish

Instructions

  1. In a bowl, combine the yogurt, tikka masala spice blend, lemon juice, ground cumin, paprika, and salt. Add the chicken pieces and marinate for at least 1 hour in the refrigerator.
  2. Heat the vegetable oil in a large skillet over medium heat. Add the onion, garlic, and ginger, and cook until softened.
  3. Add the marinated chicken to the skillet and cook until browned and cooked through.
  4. Pour in the crushed tomatoes and simmer for 10 minutes.
  5. Stir in the heavy cream and simmer for an additional 5 minutes.
