Ingredients
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 cup plain yogurt
- 2 tablespoons tikka masala spice blend
- 1 tablespoon lemon juice
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt to taste
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tablespoon grated ginger
- 1 can (14 oz) crushed tomatoes
- 1/2 cup heavy cream
- 1 bag of tortilla chips
- 1 cup shredded cheese
- Fresh cilantro, chopped, for garnish
Instructions
- In a bowl, combine the yogurt, tikka masala spice blend, lemon juice, ground cumin, paprika, and salt. Add the chicken pieces and marinate for at least 1 hour in the refrigerator.
- Heat the vegetable oil in a large skillet over medium heat. Add the onion, garlic, and ginger, and cook until softened.
- Add the marinated chicken to the skillet and cook until browned and cooked through.
- Pour in the crushed tomatoes and simmer for 10 minutes.
- Stir in the heavy cream and simmer for an additional 5 minutes.
- Preheat the oven to 350°F (175°C). Arrange the tortilla chips on a baking sheet.
- Spoon the chicken tikka masala mixture over the chips and sprinkle with shredded cheese.
- Bake in the preheated oven for 10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with chopped cilantro.
