Ingredients

  • 1.5 lbs (700g) boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • Salt to taste
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 2-3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 can (14 oz) crushed tomatoes
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Fresh cilantro leaves for garnish

Instructions

  1. In a large bowl, combine the yogurt, ginger-garlic paste, ground cumin, ground coriander, garam masala, turmeric, cayenne pepper, and salt. Add the chicken pieces and coat them with the marinade. Cover and refrigerate for at least 1 hour, or overnight for best results.
  2. Heat the vegetable oil in a large pan over medium heat. Add the marinated chicken pieces and cook until browned and cooked through. Remove the chicken from the pan and set aside.
  3. In the same pan, add the butter and sauté the chopped onion and garlic until softened and golden brown.
  4. Stir in the tomato paste and cook for a few minutes. Then add the crushed tomatoes and simmer for 10 minutes.
  5. Pour in the heavy cream and return the cooked chicken to the pan. Simmer for an additional 10 minutes, allowing the flavors to meld together.
  6. Garnish with fresh cilantro leaves and serve hot with naan or steamed rice.
