Murgh Vindaloo (chicken Vindaloo)

Ingredients
- 1.5 lbs chicken, cut into pieces
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 1-inch ginger, grated
- 3-4 green chilies, chopped
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1 tsp turmeric powder
- 2 tsp red chili powder
- 1 tsp garam masala
- 2 tbsp vinegar
- 3-4 tbsp vegetable oil
- Salt to taste
Instructions
- Heat oil in a pan and add cumin seeds and mustard seeds. Let them splutter.
- Add onions, garlic, ginger, and green chilies. Sauté until the onions turn golden brown.
- Add turmeric powder, red chili powder, and garam masala. Cook for 2-3 minutes.
- Add the chicken pieces and cook until they are browned.
- Pour in the vinegar and season with salt. Stir well.
- Add water, cover the pan, and let the chicken cook for 20-25 minutes.
- Once the chicken is tender and the sauce has thickened, remove from heat.
- Garnish with cilantro and serve hot with rice or naan.
