Ingredients

  • 1.5 lbs (700g) chicken, cut into pieces
  • 1 cup plain yogurt
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1/2 cup unsalted pistachios, chopped
  • 1/2 teaspoon saffron threads, soaked in 2 tablespoons of warm milk
  • 1/2 cup heavy cream (or dairy-free cream for a dairy-free option)
  • 2 tablespoons ghee or vegetable oil
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh cilantro leaves for garnish

Instructions

  1. In a large bowl, marinate the chicken pieces in yogurt, turmeric, ground coriander, ground cumin, salt, and pepper. Let it marinate for at least 30 minutes.
  2. Heat ghee or oil in a large pan over medium heat. Add the chopped onion and cook until softened.
  3. Add the minced garlic and grated ginger to the pan and cook for another 2 minutes.
  4. Add the marinated chicken to the pan and cook until it is browned on all sides.
  5. Pour in the saffron-infused milk, along with the soaked saffron threads, and stir well.
  6. Reduce the heat to low, cover the pan, and let the chicken cook for about 20 minutes, or until it is fully cooked.
  7. Stir in the heavy cream and chopped pistachios, and let the dish simmer for another 5 minutes.
  8. Garnish with fresh cilantro leaves before serving.
