Murgh Zafrani (creamy Saffron And Pistachio Chicken)

Ingredients
- 1.5 lbs (700g) chicken, cut into pieces
- 1 cup plain yogurt
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 1/2 cup unsalted pistachios, chopped
- 1/2 teaspoon saffron threads, soaked in 2 tablespoons of warm milk
- 1/2 cup heavy cream (or dairy-free cream for a dairy-free option)
- 2 tablespoons ghee or vegetable oil
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Fresh cilantro leaves for garnish
Instructions
- In a large bowl, marinate the chicken pieces in yogurt, turmeric, ground coriander, ground cumin, salt, and pepper. Let it marinate for at least 30 minutes.
- Heat ghee or oil in a large pan over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic and grated ginger to the pan and cook for another 2 minutes.
- Add the marinated chicken to the pan and cook until it is browned on all sides.
- Pour in the saffron-infused milk, along with the soaked saffron threads, and stir well.
- Reduce the heat to low, cover the pan, and let the chicken cook for about 20 minutes, or until it is fully cooked.
- Stir in the heavy cream and chopped pistachios, and let the dish simmer for another 5 minutes.
- Garnish with fresh cilantro leaves before serving.
