Murgir Mangxo (assamese Style Chicken Curry)
Murgir Mangxo is a traditional chicken curry from Assamese cuisine that is known for its rich and aromatic flavors. This dish is a staple in Assamese households and is often enjoyed with steamed rice or flatbreads.
Ingredients
- 1 kg chicken, cut into pieces
- 2 onions, finely chopped
- 3 tomatoes, pureed
- 1/4 cup mustard oil
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1 teaspoon turmeric powder
- 2 teaspoons red chili powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- Salt to taste
- 2-3 green chilies, slit
- Fresh coriander leaves for garnish
Instructions
- Heat mustard oil in a pan and add the chopped onions. Sauté until golden brown.
- Add the ginger and garlic paste, and cook for a few minutes.
- Now, add the chicken pieces and cook until they are slightly browned.
- Next, add the tomato puree, turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well and cook for 10-15 minutes.
- Pour in 2 cups of water, cover the pan, and let the chicken simmer until it is fully cooked and the gravy thickens.
- Garnish with slit green chilies and fresh coriander leaves before serving.
