Ingredients

  • 1 large eggplant, sliced
  • 1 lb ground beef

  • 1/2 tsp ground cinnamon
  • 1/4 cup olive oil
  • 4 tbsp butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the sliced eggplant on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for 20 minutes, or until tender.
  3. In a large skillet, heat 2 tbsp of olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
  4. Add the ground beef to the skillet and cook until browned. Drain any excess fat.
  5. Stir in the diced tomatoes, oregano, and cinnamon. Season with salt and pepper, and let the mixture simmer for 10 minutes.
  6. In a separate saucepan, melt the butter over medium heat. Whisk in the flour to create a roux, then gradually pour in the milk while whisking constantly. Cook the béchamel sauce until thickened, then season with salt and pepper.
  7. Layer the roasted eggplant slices in the bottom of a baking dish. Spoon the meat mixture over the eggplant, then pour the béchamel sauce on top.
  8. Bake the musaka in the preheated oven for 30-40 minutes, or until the top is golden brown and bubbly.
  9. Let the musaka cool for a few minutes before serving. Enjoy!
