Musaka (mouthwatering Musaka)

Ingredients
- 1 large eggplant, sliced
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 tsp dried oregano
- 1/2 tsp ground cinnamon
- 1/4 cup olive oil
- 4 tbsp butter
- 1/4 cup all-purpose flour
- 2 cups milk
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Place the sliced eggplant on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for 20 minutes, or until tender.
- In a large skillet, heat 2 tbsp of olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
- Add the ground beef to the skillet and cook until browned. Drain any excess fat.
- Stir in the diced tomatoes, oregano, and cinnamon. Season with salt and pepper, and let the mixture simmer for 10 minutes.
- In a separate saucepan, melt the butter over medium heat. Whisk in the flour to create a roux, then gradually pour in the milk while whisking constantly. Cook the béchamel sauce until thickened, then season with salt and pepper.
- Layer the roasted eggplant slices in the bottom of a baking dish. Spoon the meat mixture over the eggplant, then pour the béchamel sauce on top.
- Bake the musaka in the preheated oven for 30-40 minutes, or until the top is golden brown and bubbly.
- Let the musaka cool for a few minutes before serving. Enjoy!
