Musakhan Chicken Quesadillas (كيساديا الدجاج المسخن)
This recipe combines the flavors of traditional Palestinian musakhan with the convenience of quesadillas. The Musakhan Chicken Quesadillas are filled with tender chicken, caramelized onions, sumac, and pine nuts, all wrapped in a crispy tortilla.
Ingredients
- 2 cups shredded cooked chicken
- 2 large onions, thinly sliced
- 2 tablespoons olive oil
- 2 tablespoons sumac
- 1/4 cup pine nuts
- 8 flour tortillas
- 2 cups shredded mozzarella cheese
- Salt and pepper to taste
Instructions
- In a skillet, heat olive oil over medium heat. Add the sliced onions and cook until caramelized, about 15 minutes.
- Add the shredded chicken to the skillet with the caramelized onions. Season with sumac, salt, and pepper. Cook for an additional 5 minutes, then remove from heat.
- In a separate dry skillet, toast the pine nuts over medium heat until golden brown, about 3-4 minutes. Remove from heat and set aside.
- Assemble the quesadillas by placing a tortilla on a flat surface. Sprinkle a layer of shredded mozzarella cheese, then add the chicken and onion mixture, and top with toasted pine nuts. Place another tortilla on top.
- Cook the assembled quesadillas in a dry skillet over medium heat for 2-3 minutes on each side, until the tortillas are crispy and the cheese is melted.
- Slice the quesadillas into wedges and serve hot.
