Musakhan Rolls (روولز المسخن)
Musakhan rolls are a delicious Palestinian dish that combines the flavors of traditional musakhan with the convenience of a handheld roll. These rolls are filled with sumac-infused chicken, caramelized onions, and toasted pine nuts, all wrapped in a soft and fluffy bread.
Ingredients
- 2 lbs chicken thighs, bone-in and skin-on
- 2 tbsp olive oil
- 3 tbsp sumac
- 1 tsp ground cumin
- 1 tsp ground allspice
- 1 tsp salt
- 1/2 tsp black pepper
- 4 large onions, thinly sliced
- 1/4 cup pine nuts, toasted
- 12 pieces of flatbread or pita
Instructions
- In a bowl, mix the chicken thighs with olive oil, sumac, cumin, allspice, salt, and black pepper. Let it marinate for 30 minutes.
- In a large skillet, caramelize the onions over low heat until soft and golden brown.
- Cook the marinated chicken thighs in the same skillet until fully cooked and tender. Shred the chicken into small pieces.
- Assemble the rolls by placing a portion of the shredded chicken and caramelized onions on each piece of flatbread, then sprinkle with toasted pine nuts.
- Roll up the bread tightly and secure with toothpicks if needed.
- Heat a clean skillet over medium heat and lightly toast the rolls on all sides until golden and crispy.
