Musakhan Rolls (روولز المسخن)

Musakhan rolls are a delicious Palestinian dish that combines the flavors of traditional musakhan with the convenience of a handheld roll. These rolls are filled with sumac-infused chicken, caramelized onions, and toasted pine nuts, all wrapped in a soft and fluffy bread.

Musakhan Rolls (روولز المسخن)

Ingredients

  • 2 lbs chicken thighs, bone-in and skin-on
  • 2 tbsp olive oil
  • 3 tbsp sumac
  • 1 tsp ground cumin
  • 1 tsp ground allspice
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 large onions, thinly sliced
  • 1/4 cup pine nuts, toasted
  • 12 pieces of flatbread or pita

Instructions

  1. In a bowl, mix the chicken thighs with olive oil, sumac, cumin, allspice, salt, and black pepper. Let it marinate for 30 minutes.
  2. In a large skillet, caramelize the onions over low heat until soft and golden brown.
  3. Cook the marinated chicken thighs in the same skillet until fully cooked and tender. Shred the chicken into small pieces.
  4. Assemble the rolls by placing a portion of the shredded chicken and caramelized onions on each piece of flatbread, then sprinkle with toasted pine nuts.
  5. Roll up the bread tightly and secure with toothpicks if needed.
  6. Heat a clean skillet over medium heat and lightly toast the rolls on all sides until golden and crispy.
  7. Serve the musakhan rolls warm and enjoy!
