Mushroom and Barley Soup (Grybų ir miežių sriuba)
Grybų ir miežių sriuba, or Mushroom and Barley Soup, is a traditional Lithuanian dish that is hearty, flavorful, and perfect for a cozy meal on a cold day.
Ingredients
- 1 cup barley
- 1 onion, chopped
- 3 cloves garlic, minced
- 500g mushrooms, sliced
- 6 cups vegetable broth
- 2 bay leaves
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the onions and garlic, and cook until softened.
- Add the mushrooms and cook until they release their liquid and start to brown.
- Stir in the barley, vegetable broth, and bay leaves. Season with salt and pepper.
- Bring the soup to a boil, then reduce the heat and let it simmer for about 1 hour, or until the barley is tender.
- Remove the bay leaves and adjust the seasoning if needed.
- Serve the soup hot, garnished with fresh parsley.
