Mushroom and Barley Soup (Grybų ir miežių sriuba)

Ingredients

  • 1 cup barley
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 500g mushrooms, sliced
  • 6 cups vegetable broth
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onions and garlic, and cook until softened.
  2. Add the mushrooms and cook until they release their liquid and start to brown.
  3. Stir in the barley, vegetable broth, and bay leaves. Season with salt and pepper.
  4. Bring the soup to a boil, then reduce the heat and let it simmer for about 1 hour, or until the barley is tender.
  5. Remove the bay leaves and adjust the seasoning if needed.
  6. Serve the soup hot, garnished with fresh parsley.
