Mushroom and Potato Gratin (Sēņu un kartupeļu gratēns)
This Sēņu un kartupeļu gratēns, or Mushroom and Potato Gratin, is a comforting and hearty dish from Latvian cuisine. It's perfect for a cozy family dinner or a special gathering with friends.
Ingredients
- 500g potatoes, thinly sliced
- 300g mushrooms, sliced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 200ml heavy cream
- 100g grated cheese
- 2 tbsp butter
- Salt and pepper to taste
Instructions
- Preheat the oven to 180°C (350°F).
- Grease a baking dish with butter.
- Layer half of the sliced potatoes in the bottom of the dish.
- In a skillet, melt the butter over medium heat. Add the onions and garlic, and sauté until softened.
- Add the mushrooms to the skillet and cook until they release their liquid and become golden brown.
- Season the mushroom mixture with salt and pepper, then spread it over the layer of potatoes in the baking dish.
- Layer the remaining sliced potatoes on top of the mushroom mixture.
- Pour the heavy cream over the potatoes, ensuring it's evenly distributed.
- Sprinkle the grated cheese over the top.
- Cover the dish with foil and bake for 45 minutes. Then, remove the foil and bake for an additional 15 minutes or until the top is golden and bubbly.
- Let it cool for a few minutes before serving.
