Mushroom and Sauerkraut Soup (Hubová kapustnica)

Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 200g mushrooms, sliced
  • 1 cup sauerkraut, drained and rinsed
  • 6 cups vegetable broth
  • 1 bay leaf
  • Salt and pepper to taste
  • 1/2 cup sour cream (optional)

Instructions

  1. In a large pot, sauté the onion and garlic until softened.
  2. Add the mushrooms and cook until they release their liquid.
  3. Stir in the sauerkraut, vegetable broth, and bay leaf. Bring to a simmer and cook for 20 minutes.
