Mushroom and Sauerkraut Soup (Hubová kapustnica)

Ingredients
- 1 onion, chopped
- 2 cloves garlic, minced
- 200g mushrooms, sliced
- 1 cup sauerkraut, drained and rinsed
- 6 cups vegetable broth
- 1 bay leaf
- Salt and pepper to taste
- 1/2 cup sour cream (optional)
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the mushrooms and cook until they release their liquid.
- Stir in the sauerkraut, vegetable broth, and bay leaf. Bring to a simmer and cook for 20 minutes.
- Season with salt and pepper to taste.
- If using sour cream, stir it into the soup just before serving.
