Mushroom Medley (Грибное рагу)
Грибное рагу, or Mushroom Medley, is a traditional Belarusian dish that is hearty, flavorful, and perfect for the colder months. This dish is a delicious combination of different types of mushrooms cooked in a rich and savory sauce, served over a bed of fluffy mashed potatoes.
Ingredients
- 500g mixed mushrooms (such as button, cremini, and shiitake), sliced
- 2 onions, finely chopped
- 3 cloves garlic, minced
- 2 tbsp vegetable oil
- 2 tbsp all-purpose flour
- 2 cups vegetable broth
- 1/2 cup sour cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large skillet, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until they are soft and translucent.
- Add the sliced mushrooms to the skillet and cook until they are tender and any liquid released has evaporated.
- Sprinkle the flour over the mushrooms and stir to coat. Cook for 2-3 minutes to get rid of the raw flour taste.
- Pour in the vegetable broth, stirring constantly to avoid lumps. Bring the mixture to a simmer and cook until the sauce has thickened.
- Stir in the sour cream and season with salt and pepper to taste. Simmer for an additional 5 minutes.
- Serve the mushroom ragu over mashed potatoes, garnished with fresh parsley.
