Mushroom Medley (Грибное рагу)

Грибное рагу, or Mushroom Medley, is a traditional Belarusian dish that is hearty, flavorful, and perfect for the colder months. This dish is a delicious combination of different types of mushrooms cooked in a rich and savory sauce, served over a bed of fluffy mashed potatoes.

Mushroom Medley (Грибное рагу)

Ingredients

  • 500g mixed mushrooms (such as button, cremini, and shiitake), sliced
  • 2 onions, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp vegetable oil
  • 2 tbsp all-purpose flour
  • 2 cups vegetable broth
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until they are soft and translucent.
  2. Add the sliced mushrooms to the skillet and cook until they are tender and any liquid released has evaporated.
  3. Sprinkle the flour over the mushrooms and stir to coat. Cook for 2-3 minutes to get rid of the raw flour taste.
  4. Pour in the vegetable broth, stirring constantly to avoid lumps. Bring the mixture to a simmer and cook until the sauce has thickened.
  5. Stir in the sour cream and season with salt and pepper to taste. Simmer for an additional 5 minutes.
  6. Serve the mushroom ragu over mashed potatoes, garnished with fresh parsley.
