Mussels Gratin (lyonnaise-style Gratin De Moules)

Ingredients

  • 2 pounds fresh mussels, cleaned and debearded
  • 2 tablespoons unsalted butter
  • 2 shallots, finely chopped
  • 2 garlic cloves, minced
  • 1/2 cup dry white wine
  • 1 cup heavy cream
  • 1/2 cup grated Gruyère cheese
  • 1/4 cup breadcrumbs
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot, melt the butter over medium heat. Add the shallots and garlic, and sauté until softened.
  2. Pour in the white wine and bring to a simmer. Add the mussels, cover the pot, and cook for 5-7 minutes, or until the mussels have opened.
  3. Using a slotted spoon, transfer the mussels to a baking dish, discarding any that have not opened.
  4. Preheat the broiler in your oven.
  5. Pour the cooking liquid from the pot into a saucepan and add the heavy cream. Simmer for a few minutes until the sauce thickens slightly. Season with salt and pepper.
  6. Pour the sauce over the mussels in the baking dish. Sprinkle the Gruyère cheese and breadcrumbs on top.
  7. Place the baking dish under the broiler for 3-5 minutes, or until the cheese is bubbly and golden brown.
  8. Remove from the oven, garnish with chopped parsley, and serve hot.
