Mussels Roast (kallumakkaya Roast)

Ingredients

  • 1 kg fresh mussels, cleaned and debearded
  • 3 onions, finely sliced
  • 2 tomatoes, chopped
  • 1 inch ginger, julienned
  • 5-6 garlic cloves, minced
  • 2-3 green chilies, slit
  • 1 teaspoon turmeric powder
  • 2 tablespoons red chili powder
  • 1 tablespoon coriander powder
  • 1/2 teaspoon garam masala
  • 1 sprig curry leaves
  • Salt to taste
  • 2 tablespoons coconut oil

Instructions

  1. Heat coconut oil in a pan and add sliced onions. Sauté until golden brown.
  2. Add ginger, garlic, and green chilies. Sauté for a few minutes.
  3. Add turmeric powder, red chili powder, and coriander powder. Cook for 2-3 minutes.
  4. Add chopped tomatoes and cook until they turn mushy.
  5. Add cleaned mussels, garam masala, and salt. Mix well.
  6. Cover and cook for 10-15 minutes on low heat, stirring occasionally.
  7. Garnish with curry leaves and remove from heat.
