Mustard Greens Curry (sarson Da Saag)

Ingredients

  • 1 bunch mustard greens, washed and chopped
  • 1 bunch spinach, washed and chopped
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 3-4 green chilies, finely chopped
  • 1 inch ginger, grated
  • 4-5 garlic cloves, minced
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons ghee (clarified butter) or oil

Instructions

  1. Heat ghee or oil in a large pot over medium heat.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Add grated ginger and minced garlic, and sauté for a minute.
  4. Add chopped tomatoes and green chilies, and cook until the tomatoes are soft.
  5. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a few minutes.
  6. Add chopped mustard greens and spinach to the pot. Mix everything together.
  7. Add a little water, cover the pot, and let the greens cook until they are soft and tender.
  8. Mash the cooked greens with a masher or the back of a spoon to create a coarse texture.
  9. Add garam masala and cook for a few more minutes.
  10. Mustard Greens Curry (Sarson da Saag) is ready to be served.
