Mustard Potatoes (shorshe Aloo)

Ingredients

  • 4 medium potatoes, peeled and cubed
  • 3 tbsp mustard paste
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 2 green chilies, slit
  • 1/2 cup water
  • Salt to taste
  • 2 tbsp mustard oil

Instructions

  1. Heat mustard oil in a pan over medium heat.
  2. Add the cubed potatoes and fry until they turn golden brown. Remove and set aside.
  3. In the same pan, add the mustard paste, turmeric powder, red chili powder, and green chilies. Cook for 2 minutes.
  4. Add water and salt, then bring to a simmer.
  5. Once the sauce thickens, add the fried potatoes and cook for another 5-7 minutes.
  6. Remove from heat and serve hot.
