Mutabal

Mutabal is a delicious Middle Eastern dip made from roasted eggplant, tahini, and garlic. It's a perfect appetizer or side dish for any Mediterranean meal.

Ingredients

  • 1 large eggplant
  • 2 cloves of garlic, minced
  • 3 tablespoons tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pierce the eggplant with a fork and place it on a baking sheet. Roast in the oven for 30 minutes, or until the skin is charred and the flesh is soft.
  3. Let the eggplant cool, then peel off the skin and chop the flesh.
  4. In a bowl, mix the eggplant, garlic, tahini, lemon juice, and olive oil. Season with salt and pepper.
  5. Transfer the mixture to a serving dish, drizzle with olive oil, and garnish with fresh parsley.
