Mutabal
Mutabal is a delicious Middle Eastern dip made from roasted eggplant, tahini, and garlic. It's a perfect appetizer or side dish for any Mediterranean meal.
Ingredients
- 1 large eggplant
- 2 cloves of garlic, minced
- 3 tablespoons tahini
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Pierce the eggplant with a fork and place it on a baking sheet. Roast in the oven for 30 minutes, or until the skin is charred and the flesh is soft.
- Let the eggplant cool, then peel off the skin and chop the flesh.
- In a bowl, mix the eggplant, garlic, tahini, lemon juice, and olive oil. Season with salt and pepper.
- Transfer the mixture to a serving dish, drizzle with olive oil, and garnish with fresh parsley.
