Ingredients

  • 6 hard-boiled eggs
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 1/2 cup grated coconut
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon fennel seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 2 tablespoons oil
  • Salt to taste

Instructions

  1. Heat oil in a pan and add fennel seeds. Sauté until fragrant.
  2. Add chopped onions and sauté until golden brown.
  3. Stir in ginger-garlic paste and cook for a minute.
  4. Add tomato puree, coriander powder, turmeric powder, red chili powder, and salt. Cook until the oil separates.
  5. Grind the grated coconut with a little water to make a smooth paste.
  6. Add the coconut paste to the pan and cook for a few minutes.
  7. Add garam masala and mix well.
  8. Gently add the hard-boiled eggs to the gravy and simmer for 5-7 minutes.
  9. Garnish with cilantro and serve hot with rice or roti.
