Ingredients

  • 6 hard-boiled eggs
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 1/2 cup coconut milk
  • 2 green chilies, slit
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 sprig curry leaves
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and add mustard seeds. Once they splutter, add curry leaves, green chilies, and onions. Sauté until the onions turn golden brown.
  2. Add ginger-garlic paste and sauté for a minute. Then, add the tomato puree and cook until the oil separates.
  3. Now, add red chili powder, turmeric powder, coriander powder, garam masala, and salt. Cook for a few minutes.
  4. Pour in the coconut milk and bring the gravy to a gentle boil.
  5. Add the hard-boiled eggs and simmer for 5-7 minutes, allowing the flavors to infuse.
  6. Garnish with fresh coriander leaves and serve hot with rice or roti.
