Ingredients

  • 1 small cabbage, shredded
  • 2 potatoes, diced
  • 1 onion, finely chopped
  • 2 green chilies, sliced
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • 1/4 cup coconut milk
  • 2 tbsp ghee (clarified butter) or oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat ghee in a large pan over medium heat. Add mustard seeds and cumin seeds. Once they start to splutter, add the chopped onion and green chilies. Sauté until the onions are golden brown.
  2. Add the diced potatoes and shredded cabbage to the pan. Stir well to combine with the onions and spices.
  3. Season with turmeric powder, red chili powder, and salt. Mix thoroughly and cook for 5 minutes, stirring occasionally.
  4. Pour in the coconut milk and stir to coat the vegetables. Cover the pan and simmer for 10-15 minutes, or until the potatoes are tender.
  5. Sprinkle garam masala over the curry and mix gently. Cook for an additional 2-3 minutes.
  6. Garnish with fresh coriander leaves before serving.
