Mutta Curry (sri Lankan Egg Curry)
Mutta Curry, also known as Sri Lankan Egg Curry, is a flavorful and aromatic dish that is a staple in Sri Lankan cuisine. This creamy and spicy curry is made with hard-boiled eggs simmered in a rich coconut milk gravy, infused with a blend of traditional spices.
Ingredients
- 6 hard-boiled eggs, peeled
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1 can (400ml) coconut milk
- 2 green chilies, slit lengthwise
- 1 teaspoon ginger garlic paste
- 1 teaspoon chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon curry powder
- 1 cinnamon stick
- 2 cardamom pods
- 3 cloves
- 1 sprig curry leaves
- Salt to taste
- 2 tablespoons oil
Instructions
- Heat oil in a pan and sauté the onions until golden brown.
- Add ginger garlic paste, green chilies, and curry leaves. Sauté for a few minutes.
- Add tomatoes, chili powder, turmeric powder, curry powder, cinnamon stick, cardamom pods, and cloves. Cook until the tomatoes are soft and the oil separates.
- Pour in the coconut milk and bring to a gentle simmer.
- Add the hard-boiled eggs and simmer for 5-7 minutes, allowing the flavors to infuse.
- Season with salt and garnish with additional curry leaves if desired.
