Mutta Curry (sri Lankan Egg Curry)

Ingredients

  • 6 hard-boiled eggs, peeled
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1 can (400ml) coconut milk
  • 2 green chilies, slit lengthwise
  • 1 teaspoon ginger garlic paste
  • 1 teaspoon chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon curry powder
  • 1 cinnamon stick
  • 2 cardamom pods
  • 3 cloves
  • 1 sprig curry leaves
  • Salt to taste
  • 2 tablespoons oil

Instructions

  1. Heat oil in a pan and sauté the onions until golden brown.
  2. Add ginger garlic paste, green chilies, and curry leaves. Sauté for a few minutes.
  3. Add tomatoes, chili powder, turmeric powder, curry powder, cinnamon stick, cardamom pods, and cloves. Cook until the tomatoes are soft and the oil separates.
  4. Pour in the coconut milk and bring to a gentle simmer.
  5. Add the hard-boiled eggs and simmer for 5-7 minutes, allowing the flavors to infuse.
  6. Season with salt and garnish with additional curry leaves if desired.
