Ingredients

  • 3 cups cooked basmati rice
  • 4 eggs
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 green chili, finely chopped
  • 1 tsp ginger-garlic paste
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 1/2 cup chopped coriander leaves
  • Salt to taste
  • 3 tbsp oil

Instructions

  1. Heat 2 tbsp oil in a pan and scramble the eggs. Remove and keep aside.
  2. In the same pan, add 1 tbsp oil and sauté the onions, green chili, and ginger-garlic paste until the onions turn golden brown.
  3. Add the tomatoes and cook until they turn mushy.
  4. Add turmeric powder, red chili powder, garam masala, and salt. Mix well.
  5. Add the cooked rice and scrambled eggs. Mix gently until well combined.
  6. Garnish with chopped coriander leaves and serve hot.
