Ingredients

  • 6 hard-boiled eggs, peeled
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 1/4 cup coconut milk
  • 2 tbsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • 1 tbsp coriander powder
  • 1 tsp cumin seeds
  • 2-3 green chilies, slit
  • 1/4 cup chopped cilantro leaves
  • Salt to taste
  • 2 tbsp oil

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  2. Add ginger-garlic paste and sauté for a few minutes until the raw smell disappears.
  3. Stir in the tomato puree, turmeric powder, red chili powder, and coriander powder. Cook until the oil separates from the masala.
  4. Pour in the coconut milk and mix well. Add salt to taste.
  5. Gently add the hard-boiled eggs and simmer for 5-7 minutes, allowing the flavors to infuse.
  6. Garnish with chopped cilantro leaves and serve hot with rice or roti.
