Mutta Masala (chettinad Egg Masala)

Ingredients
- 6 hard-boiled eggs, peeled
- 2 onions, finely chopped
- 3 tomatoes, pureed
- 1/4 cup coconut milk
- 2 tbsp ginger-garlic paste
- 1 tsp turmeric powder
- 2 tsp red chili powder
- 1 tbsp coriander powder
- 1 tsp cumin seeds
- 2-3 green chilies, slit
- 1/4 cup chopped cilantro leaves
- Salt to taste
- 2 tbsp oil
Instructions
- Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for a few minutes until the raw smell disappears.
- Stir in the tomato puree, turmeric powder, red chili powder, and coriander powder. Cook until the oil separates from the masala.
- Pour in the coconut milk and mix well. Add salt to taste.
- Gently add the hard-boiled eggs and simmer for 5-7 minutes, allowing the flavors to infuse.
- Garnish with chopped cilantro leaves and serve hot with rice or roti.
