Mutta Pulav (spicy Coorgi Egg Biryani)
Mutta Pulav, also known as Spicy Coorgi Egg Biryani, is a flavorful and aromatic rice dish from the Kodava Cuisine of Karnataka, India. This dish is a perfect blend of spices, eggs, and rice, creating a delicious and satisfying meal.
Ingredients
- 2 cups basmati rice
- 4 hard-boiled eggs
- 1 large onion, thinly sliced
- 1 tomato, chopped
- 2 green chilies, slit
- 1/4 cup yogurt
- 1/4 cup chopped mint leaves
- 1/4 cup chopped coriander leaves
- 2 teaspoons ginger-garlic paste
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- Whole spices: 2 bay leaves, 4 cloves, 2-inch cinnamon stick, 4 cardamom pods
- Salt to taste
- 3 tablespoons ghee (clarified butter)
- 3 cups water
Instructions
- Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
- Heat ghee in a large pot or deep pan. Add the whole spices and sauté until fragrant.
- Add the sliced onions and sauté until golden brown.
- Stir in the ginger-garlic paste, green chilies, and chopped tomato. Cook until the tomatoes are soft.
- Now, add the red chili powder, turmeric powder, and garam masala. Mix well.
- Whisk the yogurt and add it to the pot. Cook until the ghee starts to separate.
- Add the chopped mint and coriander leaves. Mix well.
- Gently place the hard-boiled eggs in the pot and coat them with the masala.
- Finally, add the soaked basmati rice, salt, and water. Bring to a boil, then reduce the heat, cover, and cook until the rice is done.
- Once the rice is cooked, fluff it gently with a fork. Serve the Mutta Pulav hot with raita or salad.
