Mutta Roast (coorgi Style Egg Roast)

Ingredients

  • 6 hard-boiled eggs, peeled
  • 2 onions, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, slit
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 tablespoon coconut oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat coconut oil in a pan and sauté the chopped onions until they turn golden brown.
  2. Add the ginger-garlic paste and green chilies, and sauté for a few minutes.
  3. Add the chopped tomatoes and cook until they turn soft and mushy.
  4. Now add the red chili powder, turmeric powder, and garam masala. Mix well and cook for a couple of minutes.
  5. Gently add the hard-boiled eggs to the masala and coat them evenly.
  6. Cook for 5-7 minutes on low heat, stirring occasionally, until the eggs are well coated with the masala.
  7. Garnish with fresh coriander leaves and serve hot.
