Ingredients

  • 4 eggs
  • 2 onions, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, slit
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander leaves for garnish

Instructions

  1. Boil the eggs, peel, and set aside.
  2. Heat oil in a pan and sauté the onions until golden brown.
  3. Add the ginger-garlic paste and green chilies, and sauté for 2 minutes.
  4. Now, add the tomatoes and cook until they turn mushy.
  5. Add the red chili powder, turmeric powder, coriander powder, garam masala, and salt. Mix well.
  6. Gently add the boiled eggs to the masala and coat them evenly.
  7. Cook for 5-7 minutes on low heat, stirring occasionally, until the masala coats the eggs well.
  8. Garnish with fresh coriander leaves and serve hot.
