Mutton Biryani
Mutton biryani is a flavorful and aromatic dish that is popular in Indian cuisine. It is made with tender mutton pieces and fragrant basmati rice, cooked with a blend of spices and herbs.
Ingredients
- 500g mutton, cut into pieces
- 2 cups basmati rice
- 1 large onion, thinly sliced
- 4 tomatoes, chopped
- 1/2 cup plain yogurt
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 2 green chilies, slit
- 1/4 cup chopped mint leaves
- 1/4 cup chopped coriander leaves
- Whole spices: bay leaf, cinnamon, cardamom, cloves
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon biryani masala
- Salt to taste
- 4 cups water
- 3 tablespoons ghee or oil
Instructions
- Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
- Heat ghee or oil in a large pot. Add the whole spices and sauté until fragrant.
- Add the sliced onions and cook until golden brown.
- Add the mutton pieces and cook until they are browned on all sides.
- Stir in the chopped tomatoes, garlic, ginger, green chilies, and yogurt. Cook for 5 minutes.
- Add the turmeric powder, red chili powder, biryani masala, salt, mint leaves, and coriander leaves. Mix well.
- Layer the soaked rice over the mutton mixture. Pour water over the rice.
- Cover the pot with a tight-fitting lid and cook on low heat for 20-25 minutes, or until the mutton is tender and the rice is cooked.
- Once done, gently fluff the biryani with a fork and serve hot.
